My butcher makes his own dog chum(grounded up) as he calls it with the following ingredients..
Chicken carcass,organ meats(heart,liver;kidney)beef and adds in kelp,alfalfa and a few other all natural things and he sells this fresh or frozen.My dogs love this and its very healthy and in winter time i get him to grind in a little fat into the meat to help with the cold..
Instead of this I will sometimes feed them a rack of ribs or a whole chicken to give them variety in their meals
The Green tripe also sounds really great as an add in and they also sell their tripe gound in with other ingredients,their product page shows alot of their products as well their dog treats.

Beef heart is great has lots of taurine, not very well nutritionally balanced though. Lung, liver and kidneys all function as filters so toxins can accumulate in those tissues, i.e. great as a additive poor as a staple.
Deer season just opened up here and people are droping them like crazy. Here I've been cooking it for her. I'm going to try the raw a bit, although I dought she'll eat it without ketchup or HP sause. Cathy
